  • 4 Mission Original Super Soft Mini Wraps

  • 4 chicken tenders

  • 1 cup buttermilk

  • ½ tsp salt

  • ½ tsp ground white pepper

  • ¼ tsp garlic powder

  • ½ tsp onion powder

  • 1 cup breadcrumbs

  • Vegetable oil

  • 2 cups oak leaf lettuce, chopped

  • 1 tomato, sliced

  • Dill mayo:

  • ¼ cup mayonnaise

  • 2 tbsp dill, chopped

  • Juice of 1 large lemon

  • Pinch of salt

  • Step 1

    Add buttermilk and spices into a bowl and mix well.

  • Step 2

    Place chicken tenders into buttermilk mix making sure chicken is mostly covered. Cover the bowl with plastic wrap and marinate for 20-30 minutes in the fridge.

  • Step 3

    Prep lettuce and tomato for the wrap and make dill mayo while the chicken is marinating.

  • Step 4

    Place breadcrumbs in a large bowl and set up a clean board or plate next to it - this is to place the chicken on once crumbed.

  • Step 5

    Once the chicken has marinated, with one hand take one tender from the buttermilk and place it into the bowl of breadcrumbs. With the other hand fully coat tender with breadcrumbs. Place onto a plate and repeat this step for the remaining chicken.

    (TIP: using one hand for wet mixture and the other for dry will stop your hands from getting crumbed.)

  • Step 6

    Heat oil in a pan on medium-high heat and cook chicken for 3-5 minutes until golden brown and cooked in the centre. Cooked chicken should be roughly 74°C when cooked through.

  • Step 7

    Place cooked chicken onto a paper towel to absorb excess oil. Heat wraps in the microwave according to packet instructions.

  • Step 8

    Place wrap onto board or plate and add lettuce, tomato, crispy chicken tender and drizzle dill mayo.
