1 pack Mission Souvlaki Bread, warmed

900g chicken breasts, cut into chunks

4 tbsp olive oil

2 tbsp smoked paprika

2 tbsp fresh oregano, chopped

1 small shallot, chopped

2 cloves garlic, minced

1 lemon, zest and juice

⅕ tsp red chilli flakes

Salt and pepper to taste

2 zucchinis, sliced

1 cup Tzatziki
-
1 cup cherry tomatoes, halved

Shredded lettuce, for serving

Garlic Fries

¼ cup olive oil
-
2 cloves garlic, minced or grated
-
3 tbsp chopped fresh oregano
Salt flakes to taste

4 medium russet potatoes, cut into fries

Step 1
In a large bowl, combine the chicken, olive oil, paprika, oregano, shallots, garlic, lemon juice and zest, red chilli flakes and salt. Marinate for 15 minutes or overnight in the fridge.

Preheat oven to 220℃. Line a baking tray with baking paper.

In a small bowl, whisk together the garlic fries ingredients; olive oil, garlic, oregano, and salt.

In a large bowl, add potatoes and garlic mixture. Toss to coat. Arrange fries in even layer on baking paper. Bake for 15 minutes, flip, reduce the oven temperature to 200℃. Bake for another 15 minutes, or until edges are golden.

In a small bowl, toss the zucchini with olive oil, salt and pepper.

Thread the chicken onto skewers. In a grill pan over medium-high heat, grill until lightly charred and cooked through. Turn occasionally, for about 10 to 12 minutes total. During the same time, grill the zucchini until lightly charred, 3-4 minutes per side. Remove from the grill.

To serve, spread Tzatziki over Mission Souvlaki Bread. Add lettuce, tomatoes and zucchini, and top with fries and chicken.
