  • 1 pack Mission Tortilla Strips White Corn

  • 500g white fish fillets, cut into 4 cm pieces

  • 2-3 tsp Mexican chilli powder, to taste

  • 1 tbsp olive oil

  • 400g red cabbage, thinly sliced

  • 1 avocado, mashed

  • 1 red onion, finely diced

  • ½ lime, juiced

  • 1 can black beans, rinsed and drained

  • 1 cup cherry tomatoes, halved

  • 1 small avocado

  • 1 lime, cut into wedges to serve

  • 1/3 cup fresh coriander leaves to serve

  • Step 1

    In a bowl, combine fish, seasoning and oil.

  • Step 2

    In a large non-stick frying pan over high heat, cook fish, turning, for 4 minutes or cooked through.

  • Step 3

    Meanwhile, combine the avocado, onion and lime juice in a small bowl. Season.

  • Step 4

    To assemble, divide the cabbage, beans, tomatoes, fish, guacamole and Mission Tortilla Strip in serving bowl. Sprinkle with extra coriander and serve with lime wedges.
