Ingredients

1 pack Mission Tortilla Strips White Corn

500g white fish fillets, cut into 4 cm pieces

2-3 tsp Mexican chilli powder, to taste

1 tbsp olive oil

400g red cabbage, thinly sliced

1 avocado, mashed

1 red onion, finely diced
-
½ lime, juiced
-
1 can black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 small avocado
-
1 lime, cut into wedges to serve

1/3 cup fresh coriander leaves to serve

Step 1
In a bowl, combine fish, seasoning and oil.

In a large non-stick frying pan over high heat, cook fish, turning, for 4 minutes or cooked through.

Meanwhile, combine the avocado, onion and lime juice in a small bowl. Season.

To assemble, divide the cabbage, beans, tomatoes, fish, guacamole and Mission Tortilla Strip in serving bowl. Sprinkle with extra coriander and serve with lime wedges.
