1 pack Mission Deli Style White Corn Strips

500g shredded chicken

½ onion, diced

1 garlic clove, diced

1 can black beans, drained and rinsed

¼ cup tomato paste

150g cherry tomatoes

2 tbsp chipotle chillies in adobo sauce

1 tbsp smoked paprika

1 tsp chilli flakes

2 tsp ground cumin

1 bunch coriander leaves

100g cheddar, grated

50g feta, crumbled

3 avocados
-
½ red onion, diced
-
½ lime, juiced

½ cup sour cream

Step 1
Preheat oven to 180°C.

Step 2
In a pan over medium heat, cook onion and garlic until golden. Add chicken, beans, tomato paste, tomatoes, chilli, spices and season with salt and pepper.

In an ovenproof pan, add the chicken mix and cover with grated cheddar. Cook in oven for 5 minutes or until cheese is melted and golden.

Step 4
Meanwhile, make guacamole with 2 avocados, red onion and lime. Keep the avocado shells and fill them up with guacamole. Decorate as a football with sour cream.

Remove tray from oven and cool slightly, then top with corn chips, feta, coriander, avocado and dollops of sour cream. Enjoy!
