  • 1 pack Mission Low Carb Wraps

  • 1 large cauliflower, cut into florets

  • ¼ cup olive oil

  • 1 tbsp honey

  • 2 tbsp paprika

  • 1 tbsp cumin

  • 2 cloves garlic, minced

  • 1 lemon, juiced

  • 1 tbsp hot chilli flakes

  • salt and pepper to taste

  • 2 Lebanese cucumbers, sliced

  • 1 small lettuce, shredded

  • ¼ cup coriander

  • ½ cup crumbled feta

  • 1 avocado

  • 200g tzatziki

     

  • Dressing

  • ½ cup Greek yoghurt

  • ⅓ cup coriander

  • ⅓ cup parsley

    1 lemon, juiced

  • Step 1

    Preheat the oven to 200℃. Line a baking tray with baking paper.

  • Step 2

    Toss together cauliflower, olive oil, honey, spices, garlic, lemon juice, chilli flakes, and salt and pepper.

  • Step 3

    Transfer to the oven and roast for 20 minutes or until tender and lightly charred.

  • Step 4

    Meanwhile, to make the dressing, combine all ingredients in a blender until smooth.

  • Step 5

    To assemble, spread tzatziki on the base of the wrap, top with lettuce, cauliflower, avocado, and cucumber. Drizzle dressing and sprinkle with feta
