Lamb Ingredients:
500g lamb mince
½ brown onion, grated
2 tbsp fresh parsley, chopped
2 tbsp fresh mint, chopped
2 garlic cloves, minced
1 tsp cumin
¼ tsp garlic powder
1 tsp oregano
Salt & pepper, to taste

Toppings:
1 cup cherry tomatoes, chopped
½ cucumber, chopped
½ red onion, chopped
2 tbsp fresh parsley, chopped
1 lemon, juiced
½ cup feta, crumbled
Tzatziki sauce

Step 1
In a medium mixing bowl, combine the chopped cherry tomatoes, cucumber, red onion, parsley and lemon juice to create the taco toppings.

In a large mixing bowl, add all the lamb ingredients. Mix well to combine so that all the seasonings are evenly dispersed throughout the meat.

Shape the mixture into 6 even-sized round balls.

Place a ball in the centre of each taco. Using your fingers or a spatula, gently press the lamb mixture and evenly spread it across the surface of the taco.

Heat a good drizzle of olive oil in a large, non-stick pan. Place your taco, meat-side down, into the pan and press firmly to ‘smash’ them. Cook for 3-4 minutes, until the lamb crisps up.

Step 6
Carefully flip the taco and cook the other side for another 2-3 minutes until crispy. Remove from the pan and repeat with the rest of the prepared tacos.

On the lamb side of each taco, evenly spread a dollop of tzatziki sauce, sprinkle the prepared topping mixture along with crumbled feta to garnish. Serve and enjoy
