  • 1 packet Mission Soft and Fluffy Butter Flavoured Wraps

  • 2 tbsp pesto

  • 2 bocconcini balls

  • Small block of gruyere cheese, shaved

  • 2 pieces streaky bacon

  • 2 eggs, at room temperature

  • 1 tbsp parsley, chopped

  • 4-6 basil leaves, for garnish

  • Salt and Pepper, for seasoning

  • Step 1

    Preheat oven to 180°C. Heat 2 Mission Soft and Fluffy Butter Flavoured Wraps in the microwave for 15 seconds. Once heated, place wraps on an oven tray lined with baking paper.

  • Step 2

    Spread 1 tbsp of pesto over each wrap.

  • Step 3

    Tear 1 bocconcini ball and add 3-4 shavings of gruyere cheese onto each wrap.

  • Step 4

    Place streaky bacon onto each wrap in a crescent shape - this will stop the egg from spilling out once cracked on top.

  • Step 5

    Crack an egg into the crescent of bacon. Note: eggs must be at room temperature to ensure even cooking time.

  • Step 6

    Place wraps into the oven for 10-12 minutes and 3 minutes on the grill to cook the egg through.

  • Step 7

    Season with salt and pepper and garnish with parsley and basil before serving.
