6 Mission Wholegrain Super Soft Wraps

3 lamb backstraps, 600g

300g halloumi, into 6-8 slices

1 small tub tabouli

2 tsp olive oil
-
1 tbsp toasted almonds, chopped

200g tub tzatziki
-
6 lemon wedges
-
Parsley leaves, (optional) to serve

Step 1
Preheat BBQ-grill plate or frying pan until hot. Rub lamb backstraps with olive oil and season with freshly ground black pepper and salt flakes. Place lamb onto BBQ and cook for 2 minutes. Turn lamb and cook for a further minute on each side until the lamb is well browned on the outside and pink on the inside. Remove lamb from BBQ, cover with foil and rest for 5-10 minutes before slicing.

Step 2
Place 1 tsp of oil in a non-stick pan and add the halloumi. Cook for 1 minute on each side until golden brown. Remove from pan and set aside.

Step 3
Arrange some tabouli on a heated Mission Wholegrain Super Soft Wrap, top with halloumi, lamb, tzatziki, chopped almonds and lemon juice. Roll to enclose the filling. Serve immediately.
