  • 2 Mission Low Carb Wraps

  •  

    Dressing:

  • ½ cup low-fat plain yoghurt

  • 2 tsp lemon juice

  • freshly ground black pepper and salt flakes, to taste

  •  

    ½ cup chickpeas, drained rinsed

  • 1 medium carrot, shredded

  • ½ small beetroot, shredded

  • ¼ small red onion, slivered

  • 2 tsp flat leaf parsley, chopped

  •  

    2 small handfuls baby spinach leaves

  • 50g low fat feta

Instructions

  • Step 1

    Mix yoghurt and lemon juice together and season to taste. Set aside.

  • Step 2

    Combine the chickpeas, carrot, beetroot, red onion and parsley in a bowl. Arrange spinach leaves along the centre of 2 Mission Low Carb Wraps. Top with carrot and beetroot mixture and drizzle with yoghurt dressing. Finish with crumbled feta then roll wrap and serve immediately.
