Ingredients

  • 4 Mission Gluten Free Wraps, warmed for 40 seconds in a microwave oven

  • 1 tomato, finely diced

  • 1½ cups cooked brown rice

  • ¼ small red onion, cut into fine slivers

  • ¼ cup canned corn kernels, drained

  • ½ cup cannellini beans, drained & rinsed

  • Small handful of baby rocket leaves

  • Freshly ground black pepper & salt flakes, to taste

  • 100g low-fat ricotta

  • ¼ cup fresh coriander leaves

  • Lime juice, to taste

Instructions

  • Step 1

    Combine the tomato, rice, red onion, corn, cannellini beans and rocket in a bowl and season to taste with freshly ground black pepper and salt flakes. Add the crumbled ricotta, coriander leaves and lime juice to taste and toss gently. Arrange rice mixture along the centre of 4 Mission Gluten Free Wraps. Roll wrap and serve immediately.
