  • 1 packet Mission Wholemeal Roti

  • ¼ cup pinenuts

  • ¼ cup olive oil

  • 200g chickpeas, half can, rinsed and drained

  • ½ cup grape tomatoes, sliced

  • 1 tsp harissa spice

  • 1 tsp paprika spice

  • 2 tbsp parsley, chopped

  • 500g hummus

  • 1 tsp dukkah

  • ½ lemon, squeeze to serve

  • pinch of salt

  • 1 tsp parsley, chopped for garnish

  • Step 1

    Toast pinenuts in a dry pan for 2-3 minutes on a medium-high heat.

  • Step 2

    Rinse and drain chickpeas and add with cherry tomatoes to pan with oil.

  • Step 3

    Add harissa and paprika spices and 2 tbsp parsley. Stir until well combined for 3-5 minutes and turn off heat.

  • Step 4

    Transfer hummus into a serving bowl.

  • Step 5

    Spoon over chickpea mixture and dukkah on hummus.

  • Step 6

    Add squeeze of lemon, pinch of salt and garnish with parsley.

  • Step 7

    Heat Mission Wholemeal Roti in the microwave according to packet instructions.

  • Step 8

    Serve with Mission Wholemeal Roti.
