Ingredients
8 Mission® 96% Fat Free Tortillas
1/2 tablespoon Vegetable Oil
2 cloves Garlic, minced
340g of Prawn, peeled and de-veined
1/2 teaspoon Cumin, ground
1 large Onion, chopped
2 Tomatoes, chopped
1 Jalapeño Pepper, seeded and diced
1/4 cup Coriander, chopped
1 pinch Salt
Lime wedges
Sour Cream
Tasty Cheese, shredded
Instructions
1. Sauté garlic in oiled skillet, add prawns and cumin. Cook 1 minute or until pink. Remove prawns.
2. Add onion and sauté until tender, approximately 3 minutes. Add prawns, tomato and pepper. Heat through, approximately 3 minutes.
3. Remove from heat, stir in coriander and a pinch of salt.
4. Evenly portion prawn mixture into tortillas and serve with garnishes of lime wedges, dollops of sour cream and shredded tasty cheese.
