Ingredients

  • 6 Mission® 96% Fat Free Tortillas
  • 2 tablespoons Lime Juice
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Ginger, minced
  • 2 tablespoons Garlic, minced
  • 1/4 teaspoon Hot Chilli Sauce
  • 1/8 teaspoon Black Pepper
  • 450g Medium Green Prawns, peeled and de-veined
  • 1 tablespoon Vegetable Oil
  • 1 Green Capsicum, thinly sliced
  • 1 small Onion, thinly sliced
  • 2 Roma Tomatoes, chopped 

Instructions

 

1. Blend lime juice, soy sauce, ginger, garlic, hot chilli sauce and pepper together a large non-metallic bowl.

2. Add Prawns to the marinade. Cover and place in refrigerator for up to 2 hours to marinate.  Remove Prawns from marinade, reserving liquid.

3. Heat oil in a frying pan over medium-high heat.  Sauté capsicum and onion until soft (approx 5 minutes). Add marinated prawns, marinade and tomatoes, sauté just until prawns turn pink (about 3 minutes).

4. Serve prawns mixture alongside warm tortillas.
