1. Salt and pepper chicken. Marinate in lemon juice for 15 minutes.
2. Grill or skillet-cook chicken until done, approximately 8-10 minutes.
3. Cut cooked chicken into long, thin strips.
4. Warm tortillas.
5. Layer equal amounts of each ingredient on each of the 4 tortillas: starting with the cooked chicken strips, capsicum, onion, chilli, lettuce, tomatoes and ending with the coriander.
6. Finish each tortilla with a drizzle of the reserved lemon juice.
