1. Cut chicken into thin strips and combine with lime juice in a bowl. Heat half of the oil in a fry pan over medium heat. Stir-fry the chicken in two batches. Transfer to a plate. Cover with foil.
2. Heat the remaining oil in the fry pan. Stir-fry the capsicum and onion for about 5 minutes or until tender.
3. Warm tortillas according to heating instructions.
4. Fill the tortillas with rocket leaves, chicken and capsicum mixture. Sprinkle with peanuts and roll up to enclose filling. Serve immediately.
