Ingredients

  • 8 Mission® Burrito Tortillas  
  • 500g Lean Minced Beef
  • 1 cup Mozzarella cheese, shredded
  • 1 cup Tasty Cheese, shredded
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 Red Onion, diced
  • Olive Oil Cooking Spray 

Instructions

 

1. In a frying pan, cook the ground beef over a medium-high heat, adding seasoned salt and pepper, until completely cooked 5-6 minutes.

2. Drain off the juices and place the mince in a medium-sized bowl.

3. Add the two cheeses and onions into the bowl with the hamburger mince and thoroughly mix. Place an equal amount of the cheeseburger mixture on each tortilla.

4. Fold each tortilla over to create a "half moon" and press down lightly.

5. Coat the frying pan or skillet with cooking spray and warm over a medium heat.

6. Lightly brown each quesadilla for 2-3 minutes on each side until the cheese melts.

7. Remove quesadillas from the skillet and cut each into 3 wedges.

8.Serve with your favorite cheeseburger accompaniments like lettuce, tomatoes and pickles. 

Substitute extra lean minced beef, chicken or turkey for the regular mince beef above to make these quesadillas leaner.

If you are looking to reduce the fat and cholesterol in your family’s diet, choose a cottage cheese or low fat variety of cheese.
