1. Heat oil in pan. Add diced zucchini, capsicum, onion and mushrooms and cook until vegetables soften. Remove from pan and set aside.
2. Add mince and cook until browned. Stir in taco seasoning mix. Add ½ cup of water. Combine the vegetables with the mince. Simmer for 3-5 minutes, stirring occasionally.
3. For best results, heat tortillas in an ungreased, non-stick pan over medium-high heat for 10-15 seconds. Flip and heat for a further 5-10 seconds. Alternatively, place tortillas between 2 slightly dampened paper towels. Microwave on high for 25 seconds or until warm. Keep covered until ready to serve.
4. Fill tortillas with mince mixture then top with salsa, cheese and lettuce. For an extra kick, add some fresh chilli, coriander and lime juice.
