Ingredients

  • 8 Mission® 96% Fat Free Tortillas
  • 1 cup Salsa, Medium
  • 2 teaspoons Chilli Powder
  • 1/2 teaspoon Oregano, dried leaves
  • 250g Turkey Breast Cutlets or Chicken Breast
  • 2 teaspoons Vegetable Oil divided
  • 1 Red Capsicum, thinly sliced
  • 1 Green Capsicum, thinly sliced
  • 8 Red Leaf Lettuce, dried well 

Instructions

 

1. Mix chilli powder and oregano on waxed paper. Rub spice mixture into turkey/chicken.

2. In large frying pan, heat 1 teaspoon of the oil over medium-high heat. Add capsicum strips and cook over medium-high heat 4-6 minutes, stirring often, until lightly browned. Remove to a bowl, using a slotted spoon.

3. Heat remaining oil in the same frying pan. Add turkey/chicken and cook over medium-high heat 4-6 minutes, turning once, until they are browned and no longer pink in center when tested.

4. Cut turkey/chicken crosswise into narrow strips.

5. Top each warm tortilla with a lettuce leaf and arrange turkey/chicken and capsicum strips down the middle. 

6. Serve with a side of salsa.
