Ingredients

  • 4 Mission® Sundried Tomato Basil Wraps  
  • 1 tablespoon Olive Oil
  • 1 Red Capsicum, sliced
  • 1 Green Capsicum, sliced
  • 4 Spring Onions, chopped
  • 1 teaspoon Garlic, Crushed
  • 3 Skinless Chicken Breast Fillets, sliced into thin strips
  • 1 bunch Fresh Coriander
  • Salt to taste
  • Black Pepper to taste
  • 1 cup Basmati Rice, cooked according to directions on pack
  • 1/2 cup Wild Rice, cooked according to directions on pack 

Instructions

 

1. Heat oil in a fry pan or wok. Add the garlic, mixed capsicums and chicken strips and stir-fry until cooked. Season to taste.

2. Heat the wraps in a dry fry pan. Remove from pan and place a generous spoonful of mixed, cooked basmati and wild rice on each.

3. Top with the stir-fried mixture and sprinkle with chopped coriander. Wrap and serve.
