Ingredients

  • 8 Mission® Burrito Tortillas
  • 4x 120g Scotch Fillet or Rump Steaks
  • 2 tablespoons Balsamic Vinegar
  • 2 tablespoons Lemon Juice
  • 3 tablespoons Garlic, chopped
  • 2 tablespoons Olive Oil
  • Salt to taste
  • Pepper to taste
  • 3 Red Onions, sliced
  • 2 Green Capsicum, sliced
  • Vegetable Cooking Spray
  • 200g Vintage Cheddar Cheese, grated 

Instructions

 

1. Marinate scotch fillet/rump steak in balsamic vinegar, lemon juice, 2tablespoons garlic, 1 tablespoon olive oil, salt and pepper to taste. Cover and refrigerate for up to 1 hour. 


2. Grill meat to desired doneness approx 4-5 minutes each side and then cut into thin strips.

3. Sauté sliced onions with 1 tablespoon olive oil and 1 tablespoon garlic on medium-high heat. Cook 15 minutes until caramelized and remove and set aside. Sauté capsicum in same pan on medium-high heat for 5 minutes and remove and set aside.

4. Spray a non stick frying pan lightly with cooking spray and heat on a medium heat, warm tortillas 15 seconds on each side. Keep warm.

5. On each warm tortilla, place a layer of cheese and then the caramelized onions. Next, place an equal amount of steak strips on each tortilla, top with sliced capsicum and serve.
