The beautiful and rich honey yoghurt sauce combined with traditional Lamb Kofta is sure to be a winner.
Pre-heat the oven to 220˚C.
1. Place the mince, egg white, mint, chilli, oregano, nutmeg, garlic and breadcrumbs into a bowl and mix well, so you end up with a paste.
2. Add salt and pepper, then form into thin cylinders, roughly 10cm x 2cm. Place in non-stick baking tray and drizzle with a little olive oil.
3. Cook in the oven for 15 minutes, until lightly browned, turning occasionally. Meanwhile, mix honey, 2 tbsp mint and yoghurt together.
4. Heat wraps according to directions on pack. Place some baby spinach leaves on top of each wrap. Arrange koftas, and dollop some of the honey yoghurt on each. Wrap them up, leaving one end open, and serve immediately.
