Ingredients


Sauce:

  • 1 tablespoon Olive Oil
  • 2 teaspoons Crushed Garlic
  • 2 tablespoons Parsley, finely chopped
  • 2 tablespoons Coriander, finely chopped
  • 120g Unsalted Butter
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon Fresh Lime Juice 

Instructions

 

1. Heat oil in a pan and add Snapper fillets. Season with salt and pepper. Add white wine, cover with lid and cook on a low heat for about 7-10 minutes or until cooked through.

2. For the sauce, heat olive oil in a saucepan over a medium heat. Gently sauté the garlic for 1 minute. Add parsley and coriander and sauté for another 3-4 minutes. Add half of the butter and season with salt and pepper.
Add the lime. Keep the sauce warm and just before serving, stir in the remaining butter.

3. Heat tortillas according to heating instructions. Place two fillets in the centre of each and drizzle with sauce. Fold in the sides of the tortillas and pour the remaining sauce on top. Serve immediately.
