Ingredients

  • 4 Mission® Pita Bread Whole Meal
  • 1 Small Eggplant, sliced into strips
  • 1 Zucchini, sliced into strips
  • 4 tablespoons Olive Oil
  • Salt to taste
  • Pepper to taste
  • 4 balls Buffalo Mozzarella, sliced
  • 2 tablespoons Parsley, chopped
  • 4 Basil Leaves
  • 4 Sage Leaves
  • Drizzle Olive Oil 

Instructions

 

1. Pre-heat oven to 200˚C.

2. Toss vegetables in olive oil and season with salt and pepper.

3. Place vegetables on baking tray and cook until browned and cooked through.
Cool slightly and then add the parsley and arrange on top of the pitas.

4. Add the mozzarella, sage and basil leaves and drizzle over a little oil.
Place back in oven for 2 minutes or until mozzarella has melted. Serve warm.
