Ingredients

  • 9 Mission® White Corn Tortillas
  • 4 tablespoons Olive Oil
  • 3 Garlic Cloves, finely chopped
  • 1/4 Onion, finely chopped
  • 1 head of Broccoli Florets, cut into florets
  • 1 Carrot, peeled and chopped
  • 2 Yellow Squash, sliced
  • 1/3 cup Green Peas
  • 1/3 cup Corn Niblets
  • 2 Tomatoes, diced
  • 3 tablespoons Basil Leaves, finely chopped
  • 1 tablespoon Oregano Leaves, crushed
  • 4 1/2 cups Pizza Cheese, shredded
  • 1/4 cup Cream
  • Salt and Pepper to taste 

Instructions

 

1. In a frying pan, saute the garlic and onion in olive oil to a golden brown.

2. Add the broccoli, carrot, tomato, and allow to cook for 5 minutes. Stir in the squash, peas, corn, basil, oregano and cook for 2 more minutes. Season to taste and allow to cool.

3. In an oven safe bowl/pan place a layer of tortillas, a layer of vegetable filling, and a layer of cheese. Repeat and add the cream to the second layer. Place a third layer of tortillas, vegetables, cheese, and top with a final layer of tortillas. Top with the remaining cheese

4. Place in a heated oven for 30 minutes at 180°C.

5. Slice and serve hot
