Grilled Zucchini and Goat’s Cheese Wraps

Ingredients

  • 4 Mission® Zesty Garlic Herb Wraps
  • 1 tablespoon Olive Oil
  • 1 teaspoon Garlic, crushed
  • 4 medium Zucchinis, sliced
  • Salt to taste
  • Black Pepper to taste
  • 100g Goat Cheese
  • Mixed Salad Leaves
  • 30g Pine Nuts, toasted
  • 1 tablespoon Extra Virgin Olive Oil 

Instructions

 

1. Heat oil in a frypan or wok over a medium heat. Add garlic and zucchini.
Sauté until zucchini is cooked but still firm. Season with salt and freshly ground black pepper.

2. Gently warm both sides of the Wraps in a dry frying pan. Remove from pan and arrange zucchini across the middle of the wraps. Top with goat’s cheese, toasted pine nuts and salad leaves. Carefully fold the sides in to wrap the filling.

3. Cook the wraps, join side down, under a hot grill for 1 minute. Flip and cook for a further minute on the other side.
Cut the wraps in half and drizzle the extra virgin olive oil on top. Serve immediately.
