Enchiladas are a Mexican favourite and with this recipe, dinner will be ready in no time!

Ingredients

  • Mission White Corn Tortillas
  • 1 package Enchilada Seasonings or Burrito Seasonings
  • 1 40g can Tomato Paste
  • 3 cups Water
  • 500g Chicken or Beef Mince
  • 1 400g can Refried Beans With Spicy Jalepenos
  • 1 Roma Tomato seeded and diced
  • 2 cups Tasty Cheese shredded
  • 1/4 cup Spring Onions sliced 

Instructions

 

1. In a large microwave-safe baking dish, combine enchilada seasoning, tomato paste, and water; mix well. Microwave, uncovered, on HIGH (100% Power) for 5 minutes to make enchilada sauce.

2. In a separate microwave-safe dish, cook chicken, covered, on HIGH (100% Power) for 5 minutes, breaking up chicken and rotating dish half way through cooking time. Drain. Stir in beans and tomato.

3. Pour 1 cup of enchilada sauce into a 33cmx23cm shallow microwave-safe baking dish. Dip one tortilla into remaining enchilada sauce; drain excess sauce from tortilla.

4. Spoon about ¼ cup of chicken mixture down centre of tortilla. Roll and place seam down in baking dish. Repeat with remaining tortillas.

5. Spoon remaining enchilada sauce over enchiladas; cover with cheese. Microwave, covered, on HIGH (100% power) for 6 minutes and uncovered, on HIGH 4 minutes more OR until heated thoroughly and cheese is melted. Rotate dish once during cooking time.

6. Sprinkle with spring onions and serve.
