1. Heat oil in sauté pan over med-high heat.
2. Add onion and capsicum. Cook 5 minutes, stirring often, (onion and capsicum will caramelize and brown)
3. Add cream, stir to evenly combine. Cook 1-2 minutes, stirring often, (cream should be completely absorbed).
4. Salt to taste.
5. Serve.
To reduce fat, substitute canola oil for vegetable oil, use light cream.
