1. Heat oil in a skillet and add the beef, cooking until done, approximately 5 minutes. Remove the beef and reserve.
2. Cook the onion, garlic, and chilli’s and capsicum in the oil from heat until they are limp and just beginning to brown, approximately 3-4 minutes.
3. Add the cumin, coriander and beef back to the above vegetable mixture and cook, just to heat the beef and brown the onions, approximately 3 minutes.
4. Spoon an eighth of the mixture onto the center of each of the tortillas. Fold each tortilla in half and serve immediately.
Reduce fat by using leaner meat.
