1. Warm the tortillas according to the packet instructions.

2. In a small bowl, whisk eggs with salt and pepper to taste, then add the diced capsicum and mix together.

3. Pour egg and capsicum mixture into a heated, oiled frying pan or omelet pan. Cook until eggs are scrambled firm, but still moist.

4. Place warmed tortillas onto work surface and fill the centre of each tortilla with one-quarter of the cooked scrambled egg mixture.

Place an equal amount of shredded cheese over the eggs on each tortilla and roll up each tortilla to create a “burrito” wrap.

Serve immediately.
