Ingredients

  • 3 bunches asparagus

  • 1 cup frozen edamame

  • 1 bag baby spinach

  • ¼ cup plain Greek yoghurt

  • Juice of 1 lime

  • Juice of ½ - 1 lemon

  • 1 medium red onion, finely diced

  • ½ cup cucumber, finely diced

  • ¼ cup coriander, chopped

  • 2 tbsp chives, chopped

  • 2 tbsp basil, chopped

  • 1 fresh jalapeño, roughly chopped

  • ½ tsp cumin

  • ½ tsp paprika

  • ½ tsp sumac

  • Salt to taste

Instructions

  • Step 1

    Remove woody ends of the asparagus and cut into thirds.

  • Step 2

    Steam asparagus and edamame until tender (5-10 minutes) and set aside to cool.

  • Step 3

    Once cool combine asparagus, edamame and baby spinach in a food processor until smooth and spoon into a serving bowl.

  • Step 4

    Combine all remaining ingredients into the serving bowl and mix with a spoon.
