Ingredients

  • 4 cobs of corn

  • 3 tbsp mayonnaise

  • 1 tbsp sour cream

  • 1 tsp ground cumin

  • Crumbed Cotija cheese (Feta if not available)

  • 1 lime

  • Chilli powder for dusting.

Instructions

  • Step 1

    Mix mayonnaise, sour cream, cumin, and lime. Set aside.

  • Step 2

    Remove husk from corn.

  • Step 3

    Grill corn until soft and slightly charred. Once cooked, generously coat with dressing and cheese, sprinkle with ground chilli powder to taste.
