  • 1 - 2 packets Mission Jalapeño Poppers Tortilla Triangles

  • 4 large boneless skinless chicken breast

  • ½ cup flour - season with salt and pepper

  • 2 eggs

  • 1 tbsp water

  • 2 tbsp oil

  • ¼ cup Mayonnaise

  • ¼ cup sour cream

  • 1 lime

  • ½ - 1 tsp chipotle seasoning

     

  • To serve:

    Chipotli dipping sauce

  • Step 1

    Preheat oven to 180°C and line two baking trays with baking paper.

  • Step 2

    Mix mayonnaise, sour cream, lime juice and seasoning and set aside. Using a food processor, blitz corn chips to create thick crumbs.

  • Step 3

    Slice chicken into 3 cm strips. Place crushed corn chip crumbs in a bowl. Whisk together eggs and water in a second bowl and place seasoned flour in a third bowl.

  • Step 4

    Coat chicken strips in flour, then in the egg mixture and roll in corn chip crumbs, repeat breading process. Place in a single layer on baking sheets. Repeat with the remaining chicken pieces.

  • Step 5

    Drizzle with olive oil and bake for 15 to 20 minutes until cooked through and golden. Serve with dipping sauce.
