Ingredients

  • 4 Mission Original Super Soft Mini Wraps

  •  

    Fritters:

  • 2 cups flour

  • 3 tsp baking powder

  • Salt, pinch

  • 1 egg

  • 250ml milk

  • ½ cup grated zucchini

  • ½ cup corn kernels

  • ½ cup frozen peas, thawed and crushed

  • 1 tsp chopped chives

  • 100g clarified butter (ghee)

  •  

    8 baby lettuce leaves

  • 4 eggs, poached

  • Fresh mint leaves

  • Fresh sprigs dill

  • 4 radishes, finely sliced

  • 1 cup Greek yoghurt, optional

Instructions

  • Step 1

    Sift flour, baking powder and salt into a large bowl. Whisk egg and milk together then add to flour and whisk until a smooth batter results. Add the zucchini, corn, peas and chives and mix thoroughly. Season to taste with freshly ground black pepper and salt. Allow to stand at room temperature for 15 minutes.

  • Step 2

    Heat a small amount of ghee in a non-stick fry pan over medium heat. Pour approximately 2 tablespoons of batter into the pan for each fritter, cooking no more than four fritters at one time. Cook until bottoms are golden brown and crisp then flip to cook the other side. Continue until all the batter is used adding extra clarified butter as required. Set aside and keep warm.

  • Step 3

    To assemble; heat Mission Original Super Soft Mini Wraps in a microwave oven for 30 seconds or over a gas flame. Arrange lettuce leaves along the centre of each wrap and top with 2 fritters, a poached egg, a sprinkle of herbs and sliced radish. Serve hot with dollops of yoghurt.
