  • 6 Mission Original Super Soft Mini Wraps

  • ¾ cup cooked brown rice

  • ½ red capsicum, diced

  • 1 tbsp coriander, chopped

  • 3 tbsps green onions, sliced

  • 1 tbsp soy sauce

  • 1 egg

  • 1 lime, quartered

  • 1 tbsp peanuts, chopped

  • Step 1

    Preheat oven to 180°C. Grease a 6 cup muffin pan and line with Mission Original Super Soft Mini Wraps.

  • Step 2

    In a bowl, mix together brown rice, capsicum, coriander, 2 tbsps green onions, soy sauce and egg.

  • Step 3

    Scoop mixture into wrap cups, pressing to compact rice filling. Bake for 20 to 22 minutes or until golden and just firm to touch.

  • Step 4

    Stand in pan for 10 minutes. Then, using a butter knife, carefully lift cups from pan and serve with remaining green onions, limes and peanuts.
