  • 1 pack Mission Extra Soft Original Tortillas

    1 pack Mission White Corn Tortilla Strips

  • 2 tbsp olive oil

  • 500g minced meat

  • 1 brown onion, diced

  • 1 tsp ground cumin

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 1 tsp red chilli flakes

  • 1 tsp dried herbs

  • Salt and pepper to taste

  • 1 cup cheese, shredded

  • 1 cup Greek yoghurt

  • 1 jalapeño, sliced

  • 2 cups lettuce, shredded

  • 1 cup cherry tomatoes, sliced

  • Fresh coriander, avocado, limes and hot sauce for serving

  • Step 1

    In a large skillet, heat oil over high heat. Add meat and onion. Cook, breaking up the meat, for 5 minutes or until browned. Add spices and 3/4 cup water. Reduce heat to medium and simmer for 10 minutes or until sauce has thickened. Remove from heat.

  • Step 2

    To assemble, warm a Mission Extra Soft Original Tortilla as per packaging. Layer with meat, cheese, jalapeno and Mission White Corn Tortilla Strips. Spread with yoghurt, lettuce and tomatoes.

  • Step 3

    Place a small bowl over a second Mission Extra Soft Original Tortilla and cut out a smaller version. Add the smaller tortilla on top of the crunch tortilla and fold the edges of the large tortilla in, pressing to seal.

  • Step 4

    Heat a drizzle of olive oil in a skillet, add crunch tortilla and cook 2 minutes per side until crisp and golden brown.

  • Step 5

    Serve warm with avocado, hot sauce, tomatoes and limes.
