  • 4 Mission Original Super Soft Wraps

  • 25g butter

  • 1 red onion, sliced

  • 2 garlic cloves, crushed

  • 1 zucchini, grated

  • 2 tbsp fresh thyme leaves

  • 140g goats cheese, broken into pieces

  • 2 eggs

  • 160g crème fraîche

  • 100g rocket, to serve

  • Step 1

    Preheat oven to 170°C. Grease and line a deep 23cm tart tin with baking paper.

  • Step 2

    Layer Mission Original Super Soft Wraps into tart tin, one in the centre and the remaining off centre to create the tart walls. Cover with foil and bake for 15 minutes. Set aside

  • Step 3

    Heat butter in a frying pan. Add onions and potato, cook for 10 minutes, turning occasionally.

  • Step 4

    Add garlic, zucchini and thyme and cook for a further 5 minutes.

  • Step 5

    Pour mixture into tart case along with goats cheese and spread out evenly.

  • Step 6

    Whisk the eggs and crème fraîche together and season. Pour into tart case and bake for 30 to 35 minutes until just set. If case is browning too quickly, cover edge with foil.

  • Step 7

    Serve warm with rocket leaves scattered over the top
