  • 1 230g bag Mission White Corn Tortilla Strips

    1 230g bag Mission Cheesy Nachos Corn Chips

    ¼ cup Mission Chunky Mild Salsa

  • 1 tbsp olive oil

  • ½ white onion, chopped

  • 250g beef mince

  • 1 tsp cumin

  • ½ tsp chilli flakes

  • 200g tin black beans, drained

  • 200g cheddar cheese, grated

  • 100g cherry tomatoes, sliced

  • 2 avocados, smashed

  • ¼ cup sour cream

  • 4 spring onions, finely sliced

  • 1 long red chilli, finely sliced

  • 2 tbsp coriander leaves

  • 1 lime, cut into wedges

  • Step 1

    Preheat oven to 200°C.

  • Step 2

    Heat oil in a frying pan over medium heat, add onion and cook for 3 to 5 minutes.

  • Step 3

    Increase heat and add mince, Mission Salsa, cumin and chilli flakes. Cook for 5 to 10 minutes or until the beef is browned.

  • Step 4

    In a medium ovenproof dish, place half of Mission White Corn Tortilla Strips and Cheesy Nachos Tortilla Triangles, then top with half of beef mince, then half of beans, then half of cherry tomatoes and half of cheddar cheese.

  • Step 5

    Add a second layer of corn chips, then top with remaining beef, beans and cheese. Transfer to oven and cook for 8 to 10 minutes or until cheese has melted.

  • Step 6

    Remove nachos from the oven and top with remaining cherry tomatoes, smashed avocado, sour cream, spring onion, chilli and coriander. Serve hot and with lime wedges.
