Ingredients

  • 3 Mission Plain Roti, heated for 1 minute in microwave

  • 750g beef rump steak, diced

  • 4 tbsp good quality Korma Curry Paste

  • 1 tbsp ghee or olive oil

  • 1 onion, diced

  • 1 clove garlic, finely chopped

  • 1 cup water or beef stock

  • 250ml coconut cream

  • 1 tbsp brown sugar

  •  

    To Serve:

  • ¼ cup roasted cashew nuts

  • fresh coriander leaves

  • Steamed rice

Instructions

  • Step 1

    Place beef cubes in a bowl and add Korma Curry Paste. Mix well to coat beef then cover and leave to marinate in the refrigerator for 1 hour or overnight if possible.

  • Step 2

    Heat ghee or olive oil in a pan. Sauté onion for 3-4 minutes until translucent. Add garlic and beef, and continue to cook until meat is well browned. Add water, coconut cream and sugar. Allow to simmer over low heat for 20 minutes, or until beef is tender and the sauce has thickened.

  • Step 3

    To serve; place Beef Korma in a serving dish and sprinkle with roasted cashew nuts and garnish with fresh coriander leaves. Serve with hot Mission Plain Roti and plenty of steamed rice.
