  • 6 Mission Original Super Soft Wraps

  • 1kg raw prawns, shell & entrails removed

  • ½ cup Peri Peri hot marinade

  •  

    Salad:

  • 500g watermelon, rind removed and cut into wedges

  • 375g organic spinach or rocket leaves

  • Seeds from ½ pomegranate

  • ½ red onion, cut into fine slivers

  • 100g pistachio nuts, roughly chopped

  • ½ bunch mint leaves

  •  

    Aioli dressing

  • Lemon wedges

Instructions

  • Step 1

    Marinate prawns for 2 hours or overnight in Peri Peri marinade.

  • Step 2

    Prepare salad; toss all ingredients together then transfer salad to a serving platter.

  • Step 3

    Cook prawns on a medium-hot BBQ grill for approximately 1 minute each side. Remove from BBQ and arrange prawns in a serving bowl.

  • Step 4

    To serve; arrange Mission Original Super Soft Wraps on a plate and allow each guest to assemble their own wrap by spooning a little salad and prawns along the centre of a Mission wrap, then drizzle with a teaspoonful of aioli and a squeeze of lemon. Serve immediately.
